Product information "Fudo - Sashimi Hocho"
Since 1000 years those high-class blades were forged. Until today the old masters continue this traditional manufacturing. With 33 layers this series belong to the first-class products throughout the market.
The blade core is made of VG-1 steel with a HRC of 58 – 62, each 16 outer layers are made of stainless damask steel. The damask steel blades offer highest cutting power with maximum flexibility. With the fine and precise sharpening a special fine cut of roast, salmon and ham is possible.
This traditional fillet knife is adequate for finest cuts of ham, roast and fish. Manufactured by Haller.
